La seguridad alimentaria es uno de los capítulos más interesantes y complicados para aquellas personas a las que nos interesa el estudio de los alimentos, de sus características, es decir, de su aspecto, su inocuidad y su valor nutritivo. Cuando hablamos de Seguridad Alimentaria podemos creer que sólo nos referimos a la posibilidad de que algo pueda llegar a un alimento y ocasionar un proceso de tipo infeccioso o tóxico. En cambio, se trata de un término más amplio, dado que hay situaciones de preparación de alimentos o de su composición, que pueden relacionarse con casos o brotes de origen alimentario.
