In the face of growing development and interest towards professional services in tourism and hospitality, Apicius International School of Hospitality (A.I.S.H.) has taken on the challenge of structuring a dynamic academic institution for individuals desiring the professional training necessary to enter these fields.

A.I.S.H. was founded in 1997 by Gabriella Ganugi as a private institution for higher education and is located in the historic center of Florence, Italy. An internationally respected leader in academic, professional and career oriented education, Apicius offers both academic and professional programs to international students seeking to combine outstanding teaching staff, state-of-the-art classroom facilities and academic integrity with field experience gained through hands-on instruction with professionals. The school mission is to teach students how to develop their own individual capacities to optimum potential, preparing them for a career in a rapidly developing industry that encompasses a wide range of exciting, constantly evolving fields.

A.I.S.H. has gained regional accreditation (The Italian accreditation system establishes that the government delegates to the regional governing bodies the implementation of control and acknowledgement of schools according to Italian law) and has certified its quality management system in the planning and provision of training activities in the tourism sector from hospitalty and tourism management to the food and wine service industries. The institution is with the region of Tuscany, delegated by the Ministry of Education

Whether a 4-year degree covering the ins and outs of the entire industry or 1 year certificate programs in specific areas, students have the opportunity to interact in an international enviroment with practicing professionals and the historically and culturally rich city of Florence while carrying out their studies.

All professional students, regardless of degree duration, initiate their studies with a specific focus (Culinary Arts, Baking & Pastry, Food Communications and Publishing, Wine Studies, Hospitality Management) and depending on the type of degree, can deepen skills and theory in single fields or opt for the full four year experience covering every aspect of Hospitality Management.

The increasing crossover of technological, multimedia, and communicational aspects with the ancient practices of cuisine and tourism calls for experts possessing keen knowledge grounded in tradition and well-honed skills combined with the ability to adapt to the changing fluxes of the present day.

A.I.S.H. offers a Master in Italian Cuisine for Professional Chefs or Hospitality graduates who wish to enhance specific skills in Culinary Arts. The program is one-year long and is aimed at celebrating the outstanding mastery of cuisine that has evolved in Italy over the centuries. It is not just exceptional ability in cutting vegetables or flipping an omelette that makes a Master Chef, but the knowledge of quality products, the ability to interpret recipes, the awareness of the historical background of dishes, and the to capacity match ingredients creating a balanced new dish.

 

The program provides students with a sound understanding of the italian gastronomic culture. It develops each student’s attitudes to their optimum potential and gives them the opportunity to acquire specific skills and abilities in order to develop their professional career. The Master Program is open to only 10 participants each year. After the successful completion of the program, students receive a Master Certificate in Italian Cuisine.... [-]
